Organic elderberries of the Sambucus canadensis of North America are used for making wines and jellies. Sambucus (elderberry) is a relatively small genus of 5–30 species of small trees and shrubs. Leaves are compound and opposite, and the small flowers produce clusters of small black, blue, or red berrylike drupes.
